This sea salt is hand-harvested in one of the last mangrove sanctuaries in El Salvador, Central-America. From the sea through the mangroves root system and volcanic soil, the water is naturally filtered to end up in ponds where it is sundried to become sea salt. Using a wooden mill, the salt is then compressed to a fine size while keeping a small portion of the sea water to ensure rich taste and mineral traces. Thanks to the saltworks, who saw a new beginning in 1992, after the civil war period, people from the local community finally sought a possible future without having to leave the country. Formerly, the saltworks had specialized in refined salt making without care for the environment. Nowadays, the whole process is kept as authentic to ancient tradition utilizing ecological means of production. The man responsible for this great effort, his devotion to the local community and to the environment, now provides us with a product that truly qualifies for the world's purest sea salt.
